Memorial Day Weekend

We had such an awesome weekend filled with family time and spending time in the SUN! I just realized that I have no pictures to show for it. (boohoo) Here’s a recap of our wonderful LONG weekend:

Friday night~ The girls and I had movie night. Darryl was at a ballgame with some friends, so we cuddled up, ate popcorn and watched: Gnomeo and Juliet, so cute!

Saturday~ We lounged around in the morning, then Hayleigh had a birthday party around 2. We then drove to Maine to celebrate my cousin’s 31st birthday. We had steak tips and very yummy fixin’s, for dinner, and then it ended with delicious cheesecake. (thanks Auntie!). The kids all played so nice together, and they had fun with Daisy (Lilly’s guinea pig).

Sunday~ Again the sun was out and it was hot! We decided to head up to the lake for the day. We spent the day at the water’s edge and I came home with a sunburn. The girls were having a sleepover at my in-laws so Darryl and I were able to have an awesome date night! Dinner at our favorite place, LaCarreta and we even topped it off with a chic-flick movie, Bridesmaids.

Monday~ We slept in and then went to my SIL’s for a cookout and then a carnival at our old church. The girls were so hot, we didn’t last too long. They ate a quick dinner, had a shower and were asleep by 7:15. We had a great weekend, I wish it wasn’t ending!

Our little Dinosaur

Today Lindsey had an all-school assembly. Each month a grade level is responsible for performing something they have been learning about. She has been studying Dinosaurs and the theme was based around that. She even volunteered to have a reading part! I was shocked and SO very proud of her! So enjoy her 30seconds of fame!

(Please excuse the shakiness! I tried waving at her when she got to the end of the line…and it was also 100 degrees in the gym and my hand was sweaty!)

Dinosaur Poop Cookies

Since Lindsey has been studying dinosaurs and today was their assembly, I offered to make a special snack for the kids. My friend Jen told me that she had a Dinosaur Poop Cookie recipe! I had never heard of such a thing, but I had to try it out. I’ll let you decide if you would want to try one.

Lindsey told me that all the kids LOVED them! There is so much sugar in them, I wouldn’t doubt it. Here is the recipe if you really dare…

Dinosaur Poop Cookies Ingredients-
1 stick butter
4 T. cocoa
2 C. sugar
1/2 C. milk
2 1/2 C. quick cooking oats
1 tsp. vanilla
1/2 C. peanut butter
Put butter, cocoa, sugar and milk in a saucepan and bring to a full boil. Boil 2 minutes. Remove from heat and add everything else. Stir well and drop by spoonfuls onto wax paper. Let cool and harden.
